Its a question that's been bugging me; what effect do holy weapons have on psykers and daemons/warp entities? I couldn't find it specified what extra effect they have.

Generally speaking, they negate the Daemon's Daemonic Toughness. I don't believe Holy weapons have any effect on regular psykers.
Alright, thanks for the tip. I'm planning on springing a bunch of Daemons at my party sometime in the near future, and I wanted some clarification on the rules.
The one that affects psykers is psycannon bolts (I think). For the life of me I can't remember the exact effect, but its certainly not healthy for them. Pretty sure psycannon bolts also affect daemons, but I seriously doubt the party will want to jump through the hoops to get such things.

Well, the plot is that we'll be going daemon/psyker/heretic hunting, so small amounts of psybolt ammo and blessed ammo will be handed out.

I shall! I actually fired a psybolt during a recent mission (yes, one psybolt) at a psyker under guard by 4 well-armed and well-trained gangers/chaos cultists in a crowded upper-hive resturant. What ended up happening is the psybolt doing so much critical damage that the psyker's ammo exploded along with his brain, killing 7 nearby civs and a Chaos cultist, and wounding the rest down to 1 or 2 wounds. Fun times.
These psybolt, in which book are they described?
I know for a fact they're listed in the Inquisitor's Handbook, and I imagine they're also listed in Daemon Hunter. I can't remember if the rules are different for each of them or not (I doubt it, or if they are, its probably minimal).
