I really thought that there was a Strange Eons option for building individual creature cards and not the whole page thing like we used to have. Wasn't there one in the Liber Fanatica pack? (For all those NPCs, for instance?)

You are not crazy. There are a couple of packages of add on for Strange Eons the second of which contain individual creature cards (in both Action and Career sized cards). I know because I use them. However other than to reassure you of your mental health I can be no further help as I have no idea where I got them from.
I'm also quite unsure in which add-on the single creature card was or was it only available for Liber Fanatica working crew. THIS is the current downloads section of Liber Fanatica. If it does not help you try contacting Sunatet as he (iirc) was the main architect behind the plug-in. There just might be some changes coming to LF during this year so I hope we can set the plug-ins we right eventually. I know this must be frustrating.
i think it is in the same one that the LF8 trade card and trade location cards came in.

Yes, LF7 cards have been reworked a bit, I added some features on the item cards for example. we added also LF8 cards, and as for LF9 we added the NPC card.
If you wish a page-wide monsters card (like in the books) check the other extension (2nd link).

Yeah, I'm way confused. I installed both sets and tried to open the LF NPC cards, but nothings working.
