If there isn't a card *in play* making it a season, it is neither Summer nor Winter.
"It is Winter."
That is a constant effect, so the card that says "It is Winter" needs to stay in play and active in order for it to remain Winter.
Think of it this way: If I have a location that says "Your characters get +1 STR," do your characters keep the +1 STR after that location leaves play?
Does that mean that the last "season" card played is the current season, ie player A has winter card in play then player B plays a summer card it then changes to summer.
Or do the two players effectively each play a different season at the same time.
It is possible to have it be "Summer" and "Winter" at the same time depending on the cards that are in play.
When playing a Black or White Raven card, it requires you to discard all other Raven attachments from play. This includes each opponent that has one or the other attached to their house card.
The crown attachments and Cotter Pyke have conditions on them that help keep seasons under control a little bit.
Crown of Meereen
If a White Raven card is not in play it is Summer.
Crown of Winter
If the Black Raven card is not in play,it is Winter.
Crown of Azor Ahai
If Crown of Azor Ahai is standing and White Raven is not in play, it is Summer. If Crown of Azor Ahai is knelt and Black Raven is not in play, it is Winter.
Cotter Pyke
If a Black Raven card is not in play, it is Winter.
It is possible that, for example, Crown of Winter and Crown of Meereen are out at the same time and there are no Black/White ravens in play. This is one scenario that allows it to be Summer and Winter at the same time because their conditions to make it Summer and Winter are met.

When there are conflicting passive effects like that, the first player determines the order of these effects.
Per the FAQ:
Passive Effects Conflict
If two passive effects are triggered at the same
time, the first player always chooses the order
in which these effects are resolved.
In your above example with Priestess of the Pyre, the first player will basically decide if the Event playing will result in the character standing or kneeling in the end. Keep in mind, however, the character temporarily was "standing" or "kneeling" if that is the passive effect that is chosen to be used first.

Note however, that Preistess of the Pyre, or Fairweather Followers, or some others are passives. This does not apply to cards like Summer's Champion that has two constant character abilities - both would kick in (although he would still be equally as useless as if it were just winter).
Yup. If it is Summer, Summer's Champion is a 4-STR mil & int Knight with Renown. If it is Winter, he's a 2-STR mil & int Knight that cannot be declared as an attacker or defender.
If it is Summer and Winter at the same time, he's a 2-STR mil & int Knight with Renown that cannot be declared as an attacker or defender. But hey, he has his Renown….
