In melee, when I select a title that gives me a bonus (say crown regent gives me +3 power) do I gain that bonus when I get attacked during a challenge even if I choose to not defend? I assume it is still considered undefended if I don't...

No, you have to have at least one participating character to get those strength bonuses.

You may want to read the rules on the Titles again. The reason you couldn't find the answer to that question on the boards is because it is part of the rule book. (People always forget to check there....)
