What is the "treat insanity" recovery skill? For example: character is in an asylum and someone is tending to him. What skill does the treating person use?

I don't believe there is one. In the Old World, there is insufficient knowledge of such matters to really treat them (we have enough difficulty doing that here).
I would give a decent asylum (rest and quiet) a fortune die's worth of help, a "snake pit" would actually have a misfortune die or more, and anything better would be very rare indeed.

This "snake pit" could even manage to heal that insanity. But only by dishing out an even more annoying one.
Concerning the required skill I'd go for medicine with long term care specialisation.
Education? Intimidation? Guile, charm?]

I'd say Medicine. It makes sense considering how mental illness was viewed once (imbalance of humours, etc.)
Yeah regular bleeding and a near pawpers diet to starve out those bad humors. Perhaps becoming a zealot might be an option. Put those insanities to good use. A life well away from adventuring could be an option.
Ah the mad and the maimed, bless em.
