recently, I realized that it seems to be defined nowhere, which ammo type can be used for which weapon...especially for dum-dum and man stopper bullets.

in the DH Core Rulebook, some weapons are listed under this ammo types, but what about all in the weapons in other supplements, especially IH ?What ammo types may they use ? And why may an autogun not use dum-dum ?

No idea about the why but the errata has made some changes what ammo can be used for various guns.

It's common sense and Gm discression. Anything that refers to being used in flamers could be used in any other flamer. Shotgun ammo in any named shotgun. Stub and auto-ammo in pretty much any non-shotgun SP weapon. Bolt rounds in all bolt weapons.
