Can I kneel an already knelt character to pay for an effect? Can I stand a standing character? i.e. Cersi's Attendant says if she's killed, choose and kneel a character. Can I choose to kneel a character if it is already knelt?
King's Champion says that while he is the only King's Champion in play, he gains a Power icon. If King's Champion makes a Power challenge and I block with someone immune to character abilities, would he lose his Power icon?
To answer your question, you can kneel someone who is already knelt with someone like Cersei's Attendant. You don't actually kneel anything because its already knelt, but you can choose them yes. However, since they didn't actually kneel you can't trigger effects that say "After a character is knelt...."
You can't kneel knelt characters to pay for a cost though. Since they don't actually kneel you aren't paying the cost.
As for the King's Champion, no. The King's Champion ability interacts with itself only. Immunity only stops effects that are interacting with the immune card. King's Champion ability doesn't interact with any other character, so a character that was immune to character abilities wouldn't do anything to King's Champion.
And even if King's Champion did lose his Power icon, once he's already committed to the Power challenge it would make no difference. The icon is only necessary to declare a character as a participating Attacker or Defender, once they are participating the lack of the icon does not take them out of the challenge.
So if someone makes a Power challenge against me and somehow (through card effects) I remove their power icon, if they win the challenge, can they still claim a power from me? You said the icon is only necessary to make the challenge, but if they lose it part way through, is the icon necessary to get the reward for winning?

The icon is only relevant for declaring characters as attackers or defenders. Once the character has successfully entered the challenge, any icon manipulation has no impact on how the challenge continues to resolve, including fulfilling claim.
