ye warhorses do stack, but if you loose 1 life in battle or psycic combat you loose all warhorses.
Yes, warhorses help Craft characters most, and maybe this rule was made to help with game balance.
BUT - You can't use 2 weapons but you can use 2 warhorses? Tosh. As this rule flies in the face of common sense, I shall ignore it.

Not really since the Warhorse can charge itself into combat! You can have an army of horses do you bidding whilst you skulk in the bushes!!

Maybe the Gladiator has trained the horses to fight with you
No, I think it is as stupid as you think. We houserule it with only one warhorse per character.
In our last game, the dread knight has obtain 2 warhorses.
he became very powerfull, but later in the game, he was defeated in psychic combat, and did not use his warhorses.
He has discard them both at the same time
