This spell turns someone into an undead entity. my question is how would(could) this be reversed?
1. Chimera (Creation level 80) spell would change them into a Being Between Worlds
2. Spiritual Existance spell (Essence level 80) would change them into a Spirit.
3. Creation spell to create a body (There are a lot) and then Transmigrate Soul (Essence level 76) to transfer the soul to the new body. Putting this soul in a dead body would ressurrect them in the new body. Combining Imitate (Creation level 30) with Transmigrate Soul could give them their body, and bring them back.
I'm sure there are other ways.
1. Chimera does not work, since they are already considered to be either Being Between Worlds or Spirits, and Chimera only works on Natural beings.
2. Spiritual Existance may work of they are not a spiritual undead, but is self only.
3. According to the core rules some undead have no soul anymore to transmigrate, and so Transmigrate Soul is impossible.

Within the base book (I do not have Those Whom Walked Amongst Us) there is no statement that being an Undead makes you a Being Between worlds, and Chimera does not say it doesn't work on undead, only that it does not work on a Being Between Worlds and Spirits. Undead are neither (and as that a being is considered a Being Between Worlds, Spirit, or Natural being, according to RAW* they are Natural). I would allow it.

According to the RAW* text Life Perversion does not state it makes them soulless, a being between worlds, spirit, etc. Because it does not state it destroys the soul, makes them a Being Between Worlds, or makes them a spirit there is no reason it wouldn't work. The spell states it corrupt the life essence (soul) and turns the body into an undead, by definition they have to have a soul or this would not work.
Although one could argue because their soul is "undead" any body they transferred to would become an undead as well. But that is for the GM to decide.
*I don't like using RAW text, because (at least in Anima) it is left ambiguous so that it can be changed by the GM. However if you want to argue RAW text, technically it does not say this is against the rules. The reason Chimera does not work on anything except natural beings is so you don't use Chimera on yourself, increase your INT, and use it on yourself again. Further most undead are not created by changing a living soul into an undead soul (as this spell seems to suggest happens) and therefore this is a special case as far as the spirit of the rules suggest, and the RAW agrees.
-Also it is RAW text that causes problems with things being overpowered. If you keep to the "spirit of the law", instead of the letter, you can prevent most power imbalances. However, my years of D&D have taught me how to manipulate RAW text if needed.

1. The base book says in Chimera description on page 130: This spell only works on Natural creatures. That is about as clear cut as a spell rule can be.
2. The rules for Living Dead in the core books GM section says they are a special type of being that when being created follow the same rules as Between World Beings when they are a physical being and follow the same creation rules as Spiritual beings when specter types. So technically Spiritual Existence might not work either as they are their own classification that can not be affected by either spell.
3. Life Perversion follows the rules for turning somebody into an undead. According to the Living Dead rules if they have a physical body(animated living dead) that is turned into undead it completely lacks a soul.
As to actual answers to the problem. Level 100 Illusion spell(False Reality) can be used to create a new reality(sort of) as if the spell was never used. The only person likely able to get a MR check is likely to be either the person who used the spell, or the thing it was used on. Level 100 destruction on the caster of Life Perversion should work as well. Provide Soul(Creation 88) to the destroyed undead might work as well(though you are just creating an imitation, not really restoring him to his previous self).
