Which and why?
It depends on your play group's style -- they are designed very differently.
If your group is going to gain more from some political intrigue, bandying with nobility, and generally having a social adventure in mind, I would go with Edge of Night.
If your group is more of a kill first, ask questions later, then Witch's Song provides more straightforward game sessions.
Obviously, a group's playstyle with radically shift how the players interact with NPCs in both adventures and can shift either adventure towards the other's strength -- but as written, Edge for social-heavy or Song for more straightforward balance. Both have a social intro that can develop into either more social or swords drawn. If swords are not likely to be drawn, Edge has the stronger body. If swords are drawn, Song has the stronger body.
As this is in the standard forum and not the GM area, I don't want to spoil any of the unique mechanics/opponents/story elements of each, but as a GM the adversaries and allies of one may appeal to you more than the other. In my case, I prefer the opposition of Edge of Night over Witch's Song.
As a final note, Witch's song includes the Witch/Warlock careers and rules so if you want to be able to add those to your players' options, it is an easy choice. Edge provides only 3 talent cards as a far as player options.
Witch's song is a much better adventure imho.

Yippie, I finally agree with Emirikol on something after quite some time!
Two weeks ago I played Witch's Song in one long weekend run. I really like that there are parts of the adventure where the characters have to go out and face monsters and stuff. But there are also very strong parts of social interaction and a LOT of drama. The players are thrown into some major moral dilemma, they have to navigate between three different factions, and when they think, they have everything under control there are always some plots and secrets which they haven't yet recognized. The way it is presented it runs very smoothly, the GM has an easy but rewarding job. Whereas in Edge of the Night the different parts don't exactly fit together, so you have to put a lot of work into preparation.
So, I'd say The Witch's Song is the better adventure. But Edge of Night is the better sourcebook. If you like easy to run adventures without too much railroading that have action, drama and fun, Witch's Song it is. If you prefer to tinker a lot, Edge of Night is a good choice, because it has a lot of material (including a description of Übersreik and all its factions) to tinker with. The adventure itself needs some work, but you can use the product for your Übersreik campaign even if you already ran the actual adventure or if you choose not to run it all.
