i plan on making a zealot and i can't find the rules on what the insanity will do if sloted as a talent. The back of the card just says "you can attach an insanity card to this sheet as if it were a talent'.

I think the benefit lies in the zealot's ability. So exhaust the insanity and gain something (not sure, what specifically, but you only have to look for his/ her special ability).
The implication here is that you haven't been using your career abilities, that's not good...
From the Player's Guide (something any self-respecting player of WFRP should have because it's dirt cheap as a PDF, but prettier to look at in paper form):
"Career Ability: Once per session, you may exhaust your insanity talent to add fortune dice to any check equal to the severity of the insanity. The insanity automatically refreshes at the end of the current act."
