Just making sure: The rulebook doesn't say anything about Immunity letting your own events through so does this mean he can't be saved with Risen from the Sea? Aaaand, does his event immunity have any effect on Assault of the Kraken?

Correct. Compare "Immune to events" and "Immune to opponent's events".

No. Assault of the Kraken doesn't target Euron and doesn't affect him directly.
