There seems to be no key to the cards in the creature vault? Am I missing something? What do all the symbols mean?

The key is on page 7 of the Guide if you have it.
If you are talking about the symbols running down the right side of the card under the Wound Threshold, from top to bottom they are Damage Rating, Soak Value, and Defense Value.

Yeah, that is a...slight...oversight. The key can be found in the Gamemaster's Guide or also in Omens of War.
