Hi all, new player here. Tried doing a search but couldn't find what I was looking for.
For seasons, I know there are certain cards that changes it from summer to winter and vis versa. However is there a starting season or is it considered like spring/autumn? Thanks!

No. There is no starting season. It is simply neither Summer nor Winter. You can imagine it to be spring or autumn if you like.
If it is not WInter of Summer, it is simply no season at all.
