I keep reading there are two ways to play the game, I've looked everywhere for an answer. Whats melee and whats jouse?

Melee is multi-player (more than 2) while joust is head to head.

Actually, there are more than 2. There is also the Kingsmoot variant and the team variant, to name a few more.

Also, Joust is really "playing at Tourney" while Melee is The Game of Thrones.
