Technically they fight as one Enemy, but they remain three separate Enemy cards. Finger or Death/Soul Shatter Spells are cast when you're about to engage in battle/psychic combat. Target is an Enemy that you're about to fight. In your example you're about to fight three Enemies so only one of them will be hit by the Spell.
I think it works the same with the Fireball Spell and Wand of Dragonfire Treasure Card.
