If i wanted to play a Targaryen card out of house with the ambush keyword how would it work? could i actually ambush it into play or would i only be able to use it during marshalling?

The only non-House Targaeryen only ambush card is Aggo's bow (it says dothraki only) so technicly I think you can but in reality it doesn't happen.

Wow didnt even realize Dragon Thief was Targaryen only, so much for using it as attachment control for a brotherhood deck

Yes, you would be able to Ambush it, but all Ambush cards are House Targ only. Still if you were running Dragon Chaser out of GJ, you could use Ambush to put him into play, just like Intimidate still works when using him out of Targ.
