I've read the description in The Gathering Storm but... I still don't get it. What is a squig? What manner of beast is he? And, I don't know... why?
Ok--- just what is a squig?
At 1:22 or so, though the whole poofing it into existence by throwing a mushroom on the ground was sorta made up for the video game.

Here is a little Squig lore for you.
They are rumored to be a fungus, a living one, but a fungus none the less. They are most commonly found alongside orcs and goblins, as hunting animals, mounts, food, and jsut abotu anything else you can think of. It is not uncommon for a goblin to ride one into battle, though in reality the squig is most likely doing the driving and the goblin is just on for the ride.
Squigs tend to be more teeth and claws than body, they also tend to 'bounce' around instead or run or walk, hence the 'Squig Hoppers' mentioned above. They are ravenous demon pig kangaroos if you will.
Most importantly, they do not care who or what they eat, and the chances of squigs turning on the goblin masters is highly likely as they are immensly hard to control. Typically goblins will prod or poke the squigs in the right direction using spears or sticks hoping that they can unleash the squigs awesome chompin' power against their enemies. Does not always work out this way lol.
Also, i dont think you'll ever find the squigs in teh wild. Which supporst the concept that they are 'grown' by night goblins in their caves in Mount Gunbad. But i am unsure if this is speculation or if more details are available.

You can say it a crossovew of a chicken (it has two feet and sometime two small ars like chicken wings), a piranha fish (ot has a mouth full of sharp teeth) with a mushroom (becouse like most of Orcs and Goblins there are comming from fungus). 
They come in many forms and it's hard or even impossible to find two identical Squigs.
If You see Night Goblins gathering - run! Becouse there could be Squigs near them.

Squigs are awsome, the only time I used one in a WFRP fight it ate the groups amber wizard.
Were you around in the 70's? Seen a Space Hopper? (ask your Dad if you don't know what I'm talking about)
