do you use agility or strength for the damage? (such as backstab and (I think) acrobatic strike).

Melee attacks use Strength for damage, and Ranged attacks use Agility for damage.

Unless the action card itself tells you otherwise. For example, Nimble Strike says to use Ag both to hit and damage.
