Its probably a stupid question but i looked at the bionic parts rules and i couldnt see a limit on how many you can have. so i was wondering if there was a limit and if not then how many is too many? and do u think its better to keep the squishy flesh or become a metal monster?

That depends on a few things. 1) Do you want to look like a monster? If so, yes. 2) Are you able to fix yourself? If not, then no. 3) Can you afford it? Think of it like car maintence, you need to change your fluids, make repairs, etc... If you are a poor person, then I would recommend against this.
And the most important question of all: Are you a tech-priest. If the answer is yes, then you are almost required to go for the whole body conversion.

Go stubber. Ammo is much much more cheaper.
As far as most of the implants and add-ons go, it would seem that you can only ever get so many of them put in. Limbs and organs have a built-in limit, and I believe you're limited to only one of each particular type of mechadendrite - but there's several different ones, so you can go for the Dr. Octopus look if you want. The remaining systems don't seem to have any set limits. The nature of implant surgery being what it is in the setting, if they can't fit the bits in you, they just bolt them on and run an extension cord to whatever they need to interface with. And if Dreadnaughts and the Rite of Setesh are any indication, as long as there's a functioning brain (or the equivalent), the rest of the flesh is almost superfluous.
The only limit for bionics is for mechadendrites - you can only have a number of them equal to your toughness bonus

Man/Machine and loss of humanity is a concept from cyberpunk games. And to our joy it does not apply to warhammer - it simply isn“t so focused on "street level" campaigns that too much enhancements would unbalance the gameplay. Even if you cyber up in dark heresy there will always be someone more badass than you. And thats a good thing!
Basically everything is replaceable, even the brain (see Eisenhorn, Pontius Glaws Mind was first transferred into a crystal sphere and then attached to a cybernetic body. Obscure and expensive, but possible). Effectively it is a way to achieve relative immortality (you can still be killed), among other ways (regular rejuvenat, xenos tech, dabbling with the warp, internment in a space marine dreadnought or similar technology).
Role playing a techpriest who has become more True Flesh than weak, squishy bits sounds like an awesome concept to me.
If the only part of your physical body is part of your brainstem and some of your grey matter - how do you keep defining yourself as human? I guess that's where all those insanity points come from.
Insanity and implants all the way! Seriously if you play a techpriest you should go for it as long as you have the money. I buy implants whether or not I actually lost a limb or not because the flesh is weak. As long as the quality is common or above that is... Just keep a couple of brain-cells and you'll do fine; there's always the rite of pure thought later on.
The only thing that becomes a problem is the cash-flow as you'll find out that most of it will go into implants, make you sure you balance it out with good gear too.
