Possibly the answer is somewhere in the rulebook, but I didn't find it.

Must the defender use all of his ships from the attacked planet, or can he choose how many he uses? (This could prevent him from loosing one of his homeplanets), may he choose to not defend at all?

You have to use them all. The rule book says that you use all of your ships on the planet (p9 in the reveal section).
