The CotDP expansion has an optional rule that allows you to choose to draw from the exhibit item deck instead of the unique item deck. If playing as Monty, would his archaeology ability allow him to draw two exhibit items and discard one, the same as with the unique item deck?

No, his ability only works on Unique Items. When you play as Monterey Jack, sometimes you have to make a decision whether you want a rare item or to use your special ability...

Likewise, Pete cannot look at the bottom of the Exhibit Item deck.
