The card has:

Response: After you win a Power challenge, choose any gold or influence producing location controlled by an opponent, and take control of that location.

Can I take control of gold and influence producing location (for example Queen Cersei's Chambers )?

Yes, you can. The text of SotK doesn't exclude the possibility to take a location that is both influence and gold providing.

How about if Cersei's (Eddards/Roberts/Doran's) Cersei's if it's been played as an attachment? The card is still a location, but is currently operating as an attachment?

I use it lots, think of it as having 2x the gold production of the card your taking. You take a Gatehouse from your opponent, well your income increased by one, and his decreased by one. The only problem I find is in power-heavy decks its hard to win the challenge sometimes.
