And I assume Melissandre Core Set will keep the Power on Red Viper from counting toward the winning total?

Mel has always been able to do that, in a sense. Strictly speaking, Mel affect's the players' ability to count the power on TRV towards his/her victory total, so TRV's immunity does not come into the picture, since the player is affected, not the character.

Mel does not say "opponents do not count the power on their characters toward victory." She says "power on opponent's characters does not count toward victory." The subject of the sentence is "power," not "players" or "opponents." So her ability works on the level of power, not on the level of players.

But, since immunity does not extend to power, TRV's immunity does not protect it from Mel and let it be counted. Mel does "invalidate" the power on TRV.
