Can you play two separate events, one which required you to win by 4 or more strength and one by 8, to the same challenge or do they need to be separate challenges?

You can play as many Responses to a single challenge as you like, provided they are legal and their play restrictions are met.
What Response requires you to win by 8? Closest I can think of is Make an Example, which requires you to count 8 total STR, not to count 8 STR more than the opponent.

Sure, assuming you don't run afoul of the "1 Response per trigger rule" (which states that each individual card - not card title - can only be used once to a single trigger) or the event card doesn't have a specific limit as part of its text (like Seductive Promise and its "limit 1 per phase" text).
