If a character fot instance has a military and power icon, stealth and gained an intrigue icon and deadly from a couple of attachments, am I right in thinking that the icon and key word from attachments can not be removed as the result of Milk of the poppy and Prince's wrath?

If so, is it because they were gained by another means, so this would screw up Martell fighting Nights Watch with the agendas.

Deadly and stealth gained by an attachment are immune to Milk of the Poppy, because them actually are not in the text box.

Any icon gained by an attachment, instead, is not immune to Prince's Wrath, because it removes icon, regardless where they are. It is like an event says "all characters loose stealth". They will loose stealth also if they have it from other meanings (attachments).

I also think that, if a character has already a M icon, and you put on it an attachment that gives a M icon, Prince's Wrat will remove just one of the two, leaving on the other one, allowing that character to still be declared partecipant in M challenges.

Ikaros is correct. The printed text box is just the words actually printed on the card. When some effects cause something to be lost/gained, you determine if that thing still remains or is totally removed by adding up all the gains and subtracting all the losses - so if an iconless character loses a M icon and then you give it a Rusted Sword, the end result will be that it has no M icon (I give this example because some might think that removing a M icon from an iconless character will have no effect and that the Rusted Sword will then give the character a M icon, but that's not right. You always have to update the total sum of effects).
