As a beginner I was wondering if the the attacking player is allowed to initiate a challenge, when the defending player cannot participate because none of his characters have the right challenge-icon. And if yes, does this then count as "unopposed"?

Yes to both! That's a great position to be in as the attacker.

Also good if the defender has no characters at all, or only kneeling characters
