I know it does not mean much but chaos cards have put up release dates of the 31/01/2021 on some of the new armada 1.5 releases. I have found that when chaoscards put up an expected deliver date they are pretty good, so I’m not holding out for Christmas.

January 31st 2021 is a Sunday . Clone Wars Armada Wave 2 is not going to be released on a Sunday. FFG almost always releases new products on Fridays.
Whenever retail websites post a release date as the last day of a month, at best they know the release date will be sometime that month, but they don't know the specific date yet.
However, this is an unconfirmed second source claiming CWA Wave 2 is scheduled for January 2021, so that's good news.

I saw that, then confused myself as I now live in Canada, and couldn’t decide if it was 12th of Nov, or 11th of Dec 😂

The UCC and CW squadron packs are scheduled for release in December , along with the CW Fleet Starters, according to FFG's Upcoming page. Whatever website the OP was referring to obviously doesn't have the correct release date -- or will get those products late.
