If I have 2 Plague Monks in my kingdom, and I play a Spell card, can I trigger them twice, one after the other ?

Yes but they would resolve one at a time, so you would only look at two cards each time.

OK, so if I understand it well :

- I play a Spell card

- I trigger one Plague Monk effect and I discard the 2 top cards of my ennemy's deck.

- Then I trigger the other Plague Monk, and I discard another 2 cards of the deck.

Am I right ?

For monk to work does it have to have the trait "spell" or are support cards considered spells?

has to have the trait spell, an example would be chillwind, there are a total of 21 'spell cards' available to a horde deck currently

I have another one for you guys : are "Epic Spell" considered as "Spell" ?

I'm not sure it is that obvious. If epic spell cards were considered as "Spell", they would have put a dot between "Epic" and "Spell" (and we would have "Elite Warrior" instead of "Warrior . Elite", like the Sword masters of Hoeth).
