Let's say a figure that is a Guardian and a Smuggler (probably Chewbacca, but that doesn't matter) opts to play Bodyguard to change an attack target from an adjacent figure to itself. Would it then be allowed to play Run for Cover to remove a die from the attack pool? We know these cards are played during the same step of the attack, but not sure if the timing window requirement for Run for Cover is being met.

I'm fairly sure that because Bodyguard causes the Declare Target step to target you, then an attack targeting you has been declared.

(I.e. while not strictly wording of the rules "is declared" is a timing portion of the ability, "you being the target" is a condition, and both have been satisfied, thus being able to use Run for Cover.)
