When I reveal as last plot (the 7th) a City one that says "BLABLABLA where x is the number of city plot you have in your used pile"

how many city I have in my used pile??? Zero or the number played between round 1 and 6???

I know that after last plot is played automatically all other used before goes into "unused" pile, so for example "To be a wolf" is not usable in that 7th round. This is the same situation???

In the 7 round you have 6 plots in your used pile, 1 revealed and 0 in you plot deck. In the 8 round you will have 1 in your used pile, the one revealed and 5 in you plot deck.

You make a new plot deck after the last plot has effect so this is the reason you have 6 used plots when you reveal you last plot.

To be absolutely clear:

Your used pile is recycled into your plot deck after your final plot resolves. So you reveal #7, resolve it (with the other 6 in your used pile), then move the used plots to the (empty) plot deck.

Isn't there only 6 'city' plot cards? One in each of the king's landing chapter packs, right? Am I missing one or is this just theoretical?

There are only six "City" plot cards.

Sorry, I was talking plots in general, not specifically plots with the City trait. Sorry for the confusion.
