Been playing for a while now, getting ready to do some tournaments.
Are there any rules in place that would not allow me to use a t-65 rebel x wing model in lieu of a t-70 x wing model when Im flying Resistance? I purchased the Resistance conversion kit so I didn't have to buy a different falcon and more x wings.
Tournament Rules
Yes. They are not the same ship, they do not use the same model.
Most tournaments and most opponents probably won't care, but it's not legal to use a t65 model with a t70 card, baseplate, and dial. Do so at your own risk of DQ.
To piggyback on @thespaceinvader , whose answer is quite correct: from an official standpoint, the models are not interchangeable, and may not be used to substitute one another, in any official capacity. According to the Tournament Regulations document, which governs official play events, the correct models need to be used for ships. There are a couple of ships for which these rules are often bent - Rebel vs Resistance Falcons, for example, or Resistance Transports without a Pod attached - but largely, incorrect models are not permissible.
That said, for casual games, it's probably fine to substitute the models, as long as you and your opponent are both clear on what's what. There's nothing in the game rules, or the rules reference, that demands the correct models be used for any specific situation... it's strictly the Tournament Regulations that cares about precise models.

Falcons yes.
But, every premier FFG event has specifically clarified that transports need pods attached. I don't agree with it, but it is what it is.
For other events, I'm sure TO's won't mind.

As others have said, the Falcon is fine generally (due to the fact that until FFG releases a 2nd edition Falcon for the Resistance, both the 1st edition releases just call it a 'Millenium Falcon' so there is no actual model labelled 'Scavenged YT1300 anywhere), but the T70 vs T65 is not tournament legal.
However! Ask the Tournament Organiser (TO) for any event you feel like attending (yes, even the top events) for permission. They will either say 'yes, it's fine' or they will arrange for a spare T70 or 4 for you to borrow.

Plus, I consider it to be nice and 'fair play' to use correct model.
As I play ‘visually' a wrong model would utterly confuse me!
(I don’t look at the baseplate or cards - for me all information I learned about the ship, it’s dial and abilities are in my mind linked to the specific plastic model.)
plus, the couple bucks you safe... are not worth it IMHO
