So are the old games just getting a face lift or are they completely redesigning the stages? Cool with either one personally, but it would be nice to know.

https://www.starwars.com/news/lego-star-wars-the-skywalker-saga-key-art-interview In this interview, the interviewer says every level was built from the ground up, so I think fresh levels? They didn't dispute that statement but there's still an assumption I'm making in interpreting that.
