Quick question: Can you put as much DMG as you want on a unit to insure the opponent cannot block it all? Say, if you REALLY want that Star Destroyer dead, could you pile 5 DMG on it to make it harder to save with a block or similar?

Yes you can. With the mecaninc of the expansion giving a way to remove damage, having to assign extra damage sometimes because of the uncertainty of killing some unit is the biggest disadvantage of being the attacker.
