This coming Monday and Tuesday, I plan on putting my party through the wringer. They'll be tasked with hunting down Cad Bane after the recent Senate Hostage Crisis. I want to have a great deal of traps, false leads, and obstacles to make this a grueling hunt. Any and all ideas are welcome!
Challenging Traps & Environmental Play
The laser trap idea is always a fun one, just imagine the looks on the players' faces when the get trapped the same way the senators got trapped

Works especially well if you've got a couple PCs with high Coordination or Agility, as it gives them a time to shine.
Collapsing bridge is always a classic, have them chase him across what, for him, is a pre-planned route, and then have him detonate charges.
Another fun one is a train chase, where they have to chase him across a moving hover train. Aside from having to avoid obstacles mid fight as they run across the top of the train (if they are on top of the train), or worry about civilian casualties inside the train, he could get away by detaching the train cars and letting the PCs' train cars fall behind.
If it takes place almost immediately after the event, an air speeder chase through the sky lanes of Coruscant would be fun, with characters and PCs trading shots between speeders. Like movies where the guy leans out the window and shoots at the car they're chasing.
One inverted false lead would be them running into a Duros in a bar and either thinking that it is Cad Bane, or it is Cad Bane and they don't realize it. Whether that's because of failed checks, assumptions, or GM hinting, it would be quite hilarious.

Assuming that Cad Bane has had time to prepare traps, and isn't just triggering environmental things in the moment (which is what I'm guessing you mean by traps vs environmental play)
Traps:
1. Pre-placed detonation charges near various energy pylons, or gas lines in whatever city area he is running away in.
2. Pre-placed slicing devices to mess up any traffic control systems, or droids doing maintenance work in a specified area. For example, a networked groups of "cleaner bots" are suddenly told via their hub that the PCs are "trash", and proceed to try and grab them and stuff them in a floating trash truck. This will delay the players, and possibly allow for some comedy in the scene, if any of them end up being dumped, thus spending the rest of the scene being smelly. You could also use this on traffic control things, to cause some traffic jams to slow pursuit.
Actually, to save myself time, if you want a good idea of various urban traps/environmental things Cad Bane could do to mess with people chasing him, in an urban setting...play Watchdogs 1&2, or at least watch some videos of the various hacking tricks the protagonist can do. The entire city is pretty much their playground when it comes to messing with people chasing them.
