There were cost over-runs building the Death Star. Too many delays because Galen Erso couldn't get his ish together. Backstab was offered early retirement, and turns out, if you're a TIE Fighter pilot, early retirement is pretty tempting.

Since he shares his old artwork with Valen Rudor, my personal belief is that Rudor was 'backstabber' - since Rudor's art definitely has the Death Star on it..
