Well, as an unarmed cruise ship/hotel, I’m gonna go with Pelta size, hull and shields, no dice in any arc, maybe a blue die AA, defensive retrofit, 3 officer slots, brace/redirect/contain, max speed 2, 1 click of yaw at speed 1, 1 click of yaw on second joint at speed 2.
Command 2, Squadron 0 (maybe 1 if we are talking one pressed into service), and engineering 3.
Maybe 2 fleet support slots to make it worthwhile?
I like the design. Also, the filthy Rebels put guns on anything, surely they can convert it into some sort of assault ship. It looks about 3 times the size of a CR-90, so maybe a medium ship?
It works out at roughly 260m so just a little bit shorter than the Pelta. I'd give it similar stats, very little to no armaments, decent engineering, command 2, squadron 1, because it would probably have a transport shuttle or two on-board and a unique upgrade slot, or use it as an objective ship to escort.
It should have zero upgrade slots... with the exception of officers. It should have 4 officer slots.
3 days, 2 nights... $3300 for a single person. $7200 for a Cabin of 5. Regular (ie, not First Class).
Expensive for a Hotel , but if you liken it to a Cruise Ship experience, it makes more sense...
Let's hope that's not a signifier for how much the potential
expansion
would cost us

I like it, though I wish it were a bit more different from the CR90 in terms of basic shape and structure. At first I thought it was just a fancied up corvette akin to the Clone Wars Y-Wings.
Do we know what shipyard produced it?

A picture showed it in line with the YT 1300 and the CR90. So Corellian perhaps.

If so, it would make sense that it looks similar to a CR90, both are CEC made, probably similar engineers and design philosophy.

It's amusing how Corellia produced both the CR90 and ISD, 2 staples in their respective factions

They seem to have licensed that thing out to CEC too. Just watch the beginning of Solo.
A couple of additional photos were recently added to the official Star Wars blog: https://www.starwars.com/news/d23-expo-2019-star-wars-galactic-starcruiser . It's also officially listed as a Corellian MPO-1400 Star Cruiser. Perhaps MPO stands for multi-purpose? That could lend credence to the idea of turning one into a light warship.
Anyway, if it ever does make its way to Armada, I would expect nothing less than Speed 4, as the ship has -- count them -- 13 engines! 😂
