The riders are going to be the hardest part as they are all dressed in winter clothes. But the only thing about the tauntauns that suggests a cold climate is their shaggy fur. You might think about painting them a different color - like the brown and tan of a deer for example. I also would probably not use shading or drybrishing on their fur to de-emphasize the shaggy appearance and make them seem a little more like the short haired smoother mammals that live in woody temperate climates. Although a forest might still be very cold so you could get away with simply basing them on forest bases and otherwise painting them as standard movie canon colors.
I was definitely planning on dry brushing so thanks for the heads up on limiting their shaggy fur. I was thinking about doing a lighter brown on the sides/bottom and a darker ridge down the back.
The dudes are going to be hard, maybe something camo so it looks like they are on a covert mission.
You could also get some green stuff and fill in the shaggyness a little - this is a lot more work than not dry brushing but it would certainly give them a distinct appearance. I'd advocate for the custom fabrication of a big bushy squirrel tail for them...
I don't know if anyone else played the MMORPG Star Wars: The Old Republic, but that game had/has a ton of Tauntaun mounts in various colors. Everything from Hoth white to jet black, and every variation of color and pattern in between. I highly suggest a Google search of swtor tauntaun or similar searches. I'm sure there's even a page that lists every variation.
I'll probably be doing a variation on the "Mountain Tauntaun" from Swtor for mine. Maybe even go as far as an Appaloosa horse pattern.
