Recommendations for a good Star Wars game?

Haven't played any Star Wars games since Jedi Power Battles when episode 1 came out, and I wanted to ask your opinions on the games I have missed. I've heard good things about the KotOR series, but don't really know anything beyond that.What should I play first?Any mods I need to get the full experience?Are there things like HD graphics packs for older games such as the KotOR series?Any other recommendations?

I have a feeling many people will say the KOTOR games.

But I enjoyed the Jedi Knight and Rogue Squadron games the most.
