I've been flying the following for a few tourneys with average results, autoblaster poe is a hoot and stepping away from the Finn/Rey combo is nice:

I have been thinking of playing a list similar to option 3, but I am taking Cova instead of the Logistics Division Pilot.

Cova is a better choice with Leia on board.

Can you still trigger Cova's ability when using Leia on him?

Absolutely. Cova's ability says you get an extra die when you show a red maneuver, you don't have to execute the maneuver. Keep in mind you will be using Leia on Cova for most of the game so you need to think about your strategy carefully on when to use Leia with other ships. I ran Cova/Leia with Poe and Ello. Jessica is other good ships to use include Lulo, Greer, and Blue A-Wings. Having either Autoblasters or Tractor Beams on Cova are also great additions. M9-G8 is another good addition to help the team.
