While I fly Rey (Pilot) in the YT-1300, am I allowed to trigger her ability while attacking AND defending or do I read the "or" as I have to pick one or the other each turn? This would also answer my other question for Finn (Gunner). My interpretation of the card text was I could trigger it once per attack and once per defending as long as I had the force pool to use her ability. My opponent's interpretation was if I used her ability while defending, I could not use it for attacking and vice versa.

Pilot abilities can be used any time they are triggered. If they are meant to be limited in the way your opponent suggests, they would have wording to that effect, or charges. Compare Rey to Jake Farrel [RZ-1 A-wing]; Jake's ability trigger also contains an "or," but we know from the ability queue example in the RRG that Jake's ability can be used twice in the same round. Contrast with Tallisan Lintra [RZ-2 A-wing], which is an example of a pilot whose ability is limited by charges and so can only be used once per turn.
The Once Per Opportunity rule means that you can only use an ability once whenever it is triggered. For Rey, this means that you can't use her ability twice in the same attack/defense--for example, if you attack and roll two blanks, Rey's ability can only modify one of those blanks. However, every trigger presents a new opportunity, so Rey's pilot ability may be used each time she either attacks or defends.
'AND' signifies that both conditions are required while 'OR' signifies that only one condition must be met.
You cannot attack AND defend at the same time. That is why OR is used on the ability. If it was mean to be used only once, they would have added... "Once per round...."

Or, as Maui said, would have a charge. I think FFG is trying to get away from the "once per round" wording and using a single recovering charge instead, as its easier to keep track if you've used that ability or not that round.

sorry, i just have to add there is no such thing as a fenn gunner. he's called finn - and is a very different character indeed.
