Is there a force ability like this, or spec that can do this?
Closest that comes to mind is the Reinforce Item talent from the Armorer spec (Keeping the Peace sourcebook), which grants an item the Cortosis quality at the cost of committing 2 Force dice and suffering 3 strain each round those dice are committed, with perhaps the Imbue Item talent in both the Artisan and Armorer spec, which you could use to give a weapon a minor boost to damage. It'd take three Force dice and you'd be burning through strain pretty quickly, but those two talents would allow you to take an ordinary stick and make it impervious to being chopped up by a lightsaber and deal more damage than your basic stick.
Granted, thing to remember is that when using the Parry talent, it doesn't matter if the weapon is lightsaber-proof or not; unless the attacker spends Advantage to use the Sunder quality of their lightsaber, whatever weapon you used with Parry (including bare hands if you have the Unarmed Parry talent) is undamaged.
Conjure Force Ability
Would Sunder really work on a conjured weapon, as it can just be reformed by spending a force point?

Conjure is not what was used by the guy you are referencing. He just used his powers on his staff he carried in the comic. But as Dono said Parry already allows what he did and the reinforce item would also prevent sunder from working as well.
Yeah, Conjure is pretty much "create a weapon out of nothing" where a Force weapon is more "imbuing an item with the Force to make it stronger than it was."
As for whether Sunder would work on a Conjured weapon, I'd say that it could, and until the user takes the action to re-conjure their weapon, it'd still suffer the effects of being damaged.
I was looking for the same thing some time back but for Sith swords as they were seen as better then light sabers but it looks like it’s not truly in the game. I may try to homebrew it useing crafting rules From unlimited power.
Ichor Blade Nightsister Talent would do that.

Ichor Blade 10 points Night Sister Universal Specialization
The character can choose one brawl or melee weapon they posses granting it the Cortosis and Pierce 2 qualities and reducing its critical rating by 1 to a minimum of 1.
If the weapon is ever lost or destroyed the character can apply Ichor Blade to a new weapon.
Improved Ichor Blade 15 points Night Sister Universal Specialization
The chosen weapon also gains the Sunder and defensive 1 qualities and increases the weapon's damage by 2.
Congrats you now for 25 points have what is effectively a force weapon.
