As recommended I set out to play "Approach of Azathoth" as an introductory scenario but setting up the game I couldn't find the Eyeless Watcher monster... I checked the learn to play manual and checked the number of monster cards (62) there are 62 cards in the deck but no Eyeless Watcher… What am I missing here??

Eyeless Watcher is a specific monster. If you really are missing the card, I suggest contacting Asmodee North America for parts replacement. The turn around is really good.
