So, I see the galactic map, and of course on it are the locations of a ton of astronomical objects. How am I supposed to know what objects are planets, asteroids, gas giants, etc.? In other words, how am I supposed to describe to the players what they are at? Does FFG assume I'm going to make it up? Is there a full list of Planet profiles somewhere I'm missing? How do I know what planets are toxic to my players and which ones support life? Not complaining, just really clueless.

Honestly, I use Wookiepedia for an idea to start, but if I need a planet to be something, and it isn't already featured in Canon, then I'll change it to suit. ex. I needed a "junk planet", a la Raxus Prime, but near Rodia so the players could scavenge for ship parts. Apatros, with it's played out Cortosis mine, fit the bill nicely.

There are profiles on some planets with all the necessary details, the rest you might find in other sources like media.
There are more planets in most supplements.

Yeah, I use Wookieepedia a lot too. Their category pages have been very helpful (jungle planets, arboreal planets, ice planets, etc). Then I just kind of click through, looking for something that fits what I want or fuels an idea.
This title reminded me of a Legend of the Five Rings anecdote. After playing our first story arc, it was asked what we wanted to do next in-game. One of the players said we should go out and explore Rokugan. Another player held up the corebook and said "There's a map, someone beat us to it".

Ah but it’s not what’s on the map that is the fun part.
But for the original poster, I wouldn’t worry too much. No one is going to break the door down and arrest you for breaking canon. I always go with once you’re playing nothing is canon. And yes Wookieepedia is awesome.
