Pop quiz: How many times in a Star Wars saga movie does a character actually say "X-wing"?
Pop Quiz: Who says "X-wing"?
Once or twice iirc. Once that I definitely remember.

That is an excellent question. Saga movies, right? I was going to say 0, but Hiemfire makes me doubt that answer. Like said it in The Last Jedi, I think, so I'm going with once.

My recollection was from ESB when Luke arrived at Bespin.

Oh I just remembered another one from Poe/Leia. I may have underestimated.

So we're looking at a probable 3 mentions now.

I cheated and ctrl+f searched the scripts 😅
So I know the answer.

Did you confirm that your search only picked out the spoken references and not the stage direction mentions as well?

Yep, only direct quotes. And only from the original trilogy and new trilogy. Could be a poor assumption but I didn't check the prequels lol. Nor did I check Rogue One or Solo.
ESB: "Lord Vader: Ship approaching, X-Wing class!"
TLJ: "There are things you cannot solve by jumping in an X-wing and blowing something up!" (Leia)
TLJ: "Permission to jump in an X-wing and blow something up?" (Poe)
Yeah, I'm guessing 3. Are we missing any?
I believe Garven Dreis says something about T-65 X-wing in ANH special edition.
That'd be fourth instance total, i think?
And i believe that was in the original script, have vague recollection of it being the novelization of ANH.
EDIT Yeah, the novelization has Blue Leader (Red Leader, ie Garven Dreis, in the film) asking Luke about T-65 X-wing
EDIT2 Wait, did the film say only "T-65"?
3 times across the released 8 chapters. Not a single mention in Solo or Rogue One.

Yes.
I like pointing out that Ewok is never ever spoken in RotJ but erybody sure knew that one. Marketing.
I seem to remember in TFA when poe is trying to escape jakku the one of the stormtroopers shouts stop that x wing. I could be mistaken though.

As much as people may criticize TLJ, I really did love Poe's character in it. He very much reminded me of the pilots in the X-Wing novels.

Just like porgs! Mmmm...porgs...

To really make your head spin, why are they called “X-Wings”? Aurebesh has no “X,” and no letter that looks remotely like an X. Even the phoenetic equivalent looks like a delta (a triangle).
Also, in universe the Y-Wing should be called a V-Wing, since the phonetic V in aurebesh looks like a Latin Y.

Because the names of the fighter classes came before Star Wars fans developed Aurebesh as an alphabet... ANH predates Aurebesh by 10-15 years iirc. The names stayed what they originally were called due to the already established familiarity of them.

You beat me to it.
Just to add: the original Star Wars, before it was ANH, when Obi deactivates the tractor beams, the controls said “tractor beam”. After the 90’s rerelease the aurebesh was added in.

The change to the tractor beam lettering was made for the 2004 DVD release, not the 1997 special edition theatrical release.
The in universe explanation for that is that the roman letters we see are the High Galactic alphabet as opposed to aurebesh.
I believe it is said far fewer times than tachyon beams are referenced in Next Generation.
Imperial officer, ESB. He informs Vader that a fighter is coming in, "X-Wing Class".
