A mock-up of a stripped down T-65 X-Wing. Port wings (can make out the split cannons on the tip of the port foils) are our side, Astro slot just to the left of them. Aft on the right, engines look to be missing as is most of the cockpit and a bit of the nose. Luke's perhaps?
A partially disassembled mock-up of a repulsor initiation unit for the MkII propulsion system utilized in the prototype T-16 at the Incom experimental facilities. Clearly, this model has the acceleration components exposed for the better showing off the technical prowess of its designer.

Well there certainly seems to be a person kneeling down with their hat on backwards. They seem to have a symbol similar to the Scum & Villainy skull on the back of their shirt. At first it seemed maybe a Bulls logo (being Chicago and all) but looks more like a Star Wars logo of some sort. Perhaps look for companies presenting at the event who have that symbol?
Near a stage first suggests some sort of production equipment stacked up or set aside.
Otherwise it would seems to a model of some sort of facility. Perhaps a mock up of a set or a shooting model of such for FX. The light colored section out to the right suggests a dirt or sand area meaning not a ship unless it is crashed.

To be fair, in cannon they're mostly just referred to as Stormtroopers regardless of armor. It might be like the NATO reporting callsigns for Russian aircraft i.e. the Russians didn't refer to the Mig-29 as the Fulcrum, the Su-27 as the Flanker or the Mig-15 as the....actually let's not talk about the Mig-15's NATO reporting callsign...

Toys would be the obvious reason for the constant supply of new troopers, but at the same time it doesn't take much of a leap to say that having different Trooper variants suited to different environments is an intelligent decision in this universe.
IRL soldiers carry equipment that can wind up being 50-80 lbs or more. That equipment being suited to the environment is very important and can mean the difference between survival and gruesome death. Last thing you need in a swamp is a weapon that gets waterlogged easily. On top of that, Star Wars loves its single biome planets. We got swamp planets, tropical ocean planets with and without dry land, rain forest planets, fiery heck*-scape planets, and just so many dessert planets. If you're running a galactic empire that might one day have to deploy troops to a planet that is one massive dessert, you will be very happy that you have gear that can function well in that environment. Normal gear may be ill-suited to the heat and sand, leaving your troops ineffective at best, or dying of heat stroke at worst.
Sure, it's a tad silly that these gear sets can be needlessly different from each other in appearance, but film is a visual medium. If you want to inject realism into the soldiers in Star Wars by having them use different equipment in different environments, you need to make it visually clear that this is what's happening. Then there's the fact that it's also great for the toy line, because it always comes back to the toys in Star Wars. Toys are Lucas's fortune. Toys are why there's more than 3 Star Wars movies, for better or worse.
