Chainbound events track wins and losses, depending on the amount of people playing determines how many wins or losses it takes to get chains ie if you have 4-8 players a single or no wins makes you loose a chain, any more wins and you start gaining them. Stores can hold these events up to once a week.

Their is also personal win/loss records you can keep though these don’t effect your chains and are only manually entered separately from your Chainbound win/loss rate.

Those would be from your Chainbound events. Mark your casual wins and losses yourself. You don't have any chains because I'm guessing that this deck hasn't posted a winning record in a Chainbound event. When it does, it will get chains then.

But with 2 wins, shouldn't I have some chains/power? Considering this, maybe I went 1-2 and 1-3, which would account for 2-5 overall and no chains.

Nope. You need to post a winning record (2-1, 3-1, 3-0, or 4-0) at a single event to get power and chains.
