I fly the tie onto an asteroid can it barrel roll off as the pilot card says "While you move you ignore asteroid". I think this would be classed as an action but I am moving the ship.

It works as barrel rolling is ‘moving’ but not a maneuver.
For the full story: moving through the asteroid with your dialled manoeuvre would normally cause you to skip your Perform Action step, and the MGT ignoring the effects of the rock whilst moving therefore means it can still use its action.
Barrel rolling and boosting are considered to be moving, so it ignores the asteroid whilst doing those too. So it can takes its action, and it can roll even if its template crosses the rock, so it's fine to roll off.
If it remains on the rock, it cannot shoot, because blocking shooting is a function of BEING ON the rock, not of having moved over it, and is therefore not ignored.
If you're looking for the specific rules in the Rules Reference (1.0.2) a "move" is defined in p13 with this line:
A ship moves when it executes a maneuver or otherwise changes position using a template (such as barrel rolling or boosting).

And to complete the combo, if you have an Outer Rim Pioneer within 0-1 of the TIE, you can shoot while on the rock !

I have that combi in the fleet but sitting on rock would this not mean I roll damage dice on myself or can I just sit on rocks?

Just being on a rock doesn't make you roll for damage. You only roll for damage if you overlap while moving, and Mining Guild TIEs ignore obstacles while moving.
