So in 1e, the Decimator large ship, gets 2 attacks a round. So if it had 2 blinded pilot critical hits, would that mean BOTH attack would be "don't roll" for them? Or would it just be 1 attack would get both crits applied to it?

Which version of Blinded Pilot (original or Force Awakens deck) and how are you getting two attacks on your deci?
Original deck. Have nothing from TFA era..
And the Deci has 2 attacks, as per the AI pilot/maneuver card for Heroes of the Aturi Cluster. Not sure if that's a rule that got put INTO HOTAC, or something mis-read on the Decimator rule sheet??
It's a hotac rule. Suggest asking wherever hotac is published since it's not an official rule either way.
OT core blinded pilot only has an effect for a single attack tho.

But, to answer your question, if I'm remembering the text of the card correctly, both crits resolve on the first attack, and then are flipped facedown.
