E.g. I had three sorcerers defending against me. The defending player drew 3 fate cards - all 3 activated their special ability to double their wounds.
Would this then give them 6 total wounds each? Or just the 2.

Just the 2; when triggered, the ability gives them a health value of 2; multiple triggers just gives them a health value of 2... again. IE, it doesn't 'add one' or 'add two' or anything, it just changes the value to two.
The same applies to the Uthuk Y'llan's Flesh Ripper units.
For what it's worth, Sorcerer's are generally best at absorbing wounds, as being circle units they get Orbs quite often, and don't hit very much. Flesh Rippers are best in packs, where you increase your chances of getting at least one orb, but also where the rectangle units can pack a fierce punch.
